That's Italian!



Italian Chicken and Vegetables:

This dish is sure to please any guest, and is simple and quick to prepare.

What you need:

1 sm can sliced black olives
1 tsp minced garlic
1 yellow squash (sliced)
1 zucchini (sliced)
4 pieces of boneless chicken
1 can Italian stewed tomatoes (or 2 fresh sliced roma)
1/4 cup Parmesan cheese (grated)
1 tsp parsley
1/2 tsp oregano
1 small onion (diced)
1 green bell pepper (sliced thin)
1 tbsp olive oil
1/4 cup sliced mushrooms

Heat oil in a deep frying pan (I use Wolfgang Puck's Stainless Steel pans) on medium heat. Rinse chicken and place into pan. Cover the chicken with all other ingredients (except olives and cheese) and simmer for 15 minutes.

Turn chicken and gently spread vegetables over the pieces once more. Cook 15 minutes.

When chicken looks to be almost done, add olives and cheese - set heat to low and simmer for an additional 10 minutes.

Can be served with warm garlic bread and pasta.

Also, great placed into pizza dough with extra cheese and served as calzones (brushed lightly with butter, garlic and parsley)!

Serves 4

My garlic bread recipe:


8 pieces of sliced Italian bakery bread
3 tbs of melted butter
1 tbsp minced garlic
a sprinkle of parsley
aluminum foil

Heat oven to 375

Mix garlic into butter and brush gently onto each piece. Sprinkle with parsley and wrap (loaf-like) into foil. Place onto flat pan and bake 10 minutes. Uncover and bake an additional 5 minutes (or until lightly browned). Serve warm.
